Aloo Paratha Recipe

Aloo Paratha is a popular variation of paratha, stuffed with spiced mashed potatoes. Here's how you can make it:

 



Ingredients:

 

-       2 cups whole wheat flour

-       1 tsp salt

-       1 tbsp ghee

-       ¾ cup water

-       Additional flour for dusting

-       Ghee or oil for cooking

-       2 medium-sized potatoes, boiled and mashed

-       1 tsp grated ginger

-       1 green chili, finely chopped

-       1/2 tsp cumin seeds

-       1/2 tsp coriander powder

-       1/2 tsp garam masala

-       Salt, as per your taste

-       Fresh coriander leaves, chopped

 

Instructions:

 

1.   In a large mixing bowl, combine the whole wheat flour and salt.

2.   Add the ghee to the mixture and mix it in with your hands until the mixture resembles coarse crumbs.

3.   Slowly add the water, a little at a time, and knead the dough until it comes together and is smooth and elastic. You may not need to use all the water.

4.   Cover the dough with a damp cloth and let it rest for 30 minutes.

5.   In a separate bowl, mix together the mashed potatoes, ginger, green chili, cumin seeds, coriander powder, garam masala, salt, and chopped coriander leaves.

6.   Divide the dough into equal-sized balls (about the size of a golf ball).

7.   Take one of the dough balls and dust it with flour. Roll it out into a flat, round disc about 6-7 inches in diameter.

8.   Place a spoonful of the potato mixture in the center of the rolled-out dough.

9.   Bring the edges of the dough together to encase the potato mixture and pinch them together to seal.

10.                  Dust the stuffed dough with flour and roll it out gently to a thickness of ¼ inch or so.

11.                  Place the rolled-out paratha on the hot griddle or frying pan and cook for 1-2 minutes or until small bubbles start to appear on the surface.

12.                  Flip the paratha over and spread some ghee or oil on the surface.

13.                  Cook the other side for another 1-2 minutes or until golden brown spots appear on the surface.

14.                  Repeat the process with the remaining dough balls and potato mixture.

15.                  Serve the hot and delicious Aloo Paratha with some plain yogurt, pickle or chutney of your choice. Enjoy!
