Mixed
vegetable paratha is a delicious and nutritious Indian flatbread made with
grated and chopped mixed vegetables i.e. carrots, peas, beans, corn, onion, etc.,
and wheat flour. Here's an easy recipe for making it:-
Ingredients:

cups whole wheat flour

cup all-purpose flour
-
1/2
cup mixed vegetables (carrots, peas, beans, corn, etc.), finely chopped or
grated

1
small onion, finely chopped
-

green chilies, finely chopped (optional)

1
tsp ginger paste
-
1
tsp garlic paste
-
1/2
tsp cumin powder
-
1/2
tsp coriander powder
-
1/4
tsp turmeric powder
-
1/4
tsp red chili powder
-
Salt
as per your taste
-

tbsp vegetable oil/butter/ghee
-
Water,
as needed
Instructions:
1- In a mixing bowl,
combine the whole wheat flour, all-purpose flour, and salt. Gradually add water
and knead until you have a soft and smooth dough. Cover with a damp cloth and
set aside for 30 minutes.
2- In a separate bowl,
mix together the finely chopped vegetables, onion, green chilies (if using),
ginger paste, garlic paste, cumin powder, coriander powder, turmeric powder,
red chili powder, and salt.
3- Divide the dough into
equal-sized balls. Roll each ball into a small circle and place a spoonful of
the vegetable mixture in the center. Fold the edges of the dough over the
mixture and roll out again into a thin circle.
4- Heat a tawa or
griddle over medium-high heat. Place the paratha on the tawa and cook until
bubbles start to appear on the surface. Flip the paratha and cook the other
side until it turns golden brown.
5- Spread some butter or
ghee over the paratha and cook for another minute or so. Repeat the process
with the remaining dough and vegetable mixture.
6- Serve hot with
yogurt, pickle, or any side dish of your choice.
7- Eat and enjoy your delicious
mixed vegetable paratha.
